Hatch Chile Jam
Zia Hatch Green / Red Chile Jam
Ingredients:
- 2 jars Zia Hatch Green or Red Chile
- 8 4oz ball jars - 1 cup Apple cider vinegar
- 3.5 tablespoons powdered pectin
- 5 cups sugar
Directions:
1. Strain Zia Hatch Chile
2. Bring Zia Hatch Chile, Apple Cider Vinegar and pectin to a rolling boil
3. Add sugar, stir to consistency and bring to a rolling boil again
4. Let cook 5 to 10 minutes, stirring occasionally
5. Transfer to a container and let set or move to jarring process

To jar:
1. Bring a separate large pot of water to a boil
2. When done cooking 5-10 and still at a rolling boil, transfer jam to ball jar and screw on lid
3. Transfer jarred jam to the pot of boiling water, let boil for 15-20 mins
4. Remove jar and let sit. The lid will eventually pop and seal shut if done successfully
