Hatch Green Chile Apple Pie Popsicles
Zia Hatch Green Chile Apple Pie Popsicles
This frozen treat is the perfect one to get you through the Summer months of Hatch Chile Season.
We use greek yogurt but you could probably substitute with vanilla ice cream if you are looking to up the sweetness!
Ingredients:
Fills up a 10 piece popsicle mold
- 1/4 - 1/2 jar Zia Hatch Green Chile, strained
- 1 large Apple, cored, peeled and diced into small cubes
- 2 tbsp Almond Butter
- 2 tbsp Water
- 10 tbsp Maple Syrup
- 2.5 cups plain Greek Yogurt
- 1 tsp Vanilla Extract
- 1/2 tsp ground cinnamon
- Popsicle Mold (we recommend this one if you do not already have one)
Directions:
1. In a small saucepan add the apples, Zia Hatch Green Chile, almond butter, 3 tbsp of Maple Syrup, water and cinnamon. Mix together and cook over medium or medium low heat for around 10 minutes, until apples have softened and mixture is a chunky, sticky consistency. Set aside and let cool to room temperature.
2. In a mixing bowl, mix together the greek yogurt, vanilla extract, and remaining 7 tbsp of maple syrup until they are fully blended.
3. Once the apple and Zia Hatch Chile mixture have cooled, take your popsicle mold and pour a spoonful of the greek yogurt mixture into each popsicle slot. Following this, add a spoonful of the apple mixture and repeat this step, alternating between the two until each popsicle slot is full.
4. Tap the filled mold on the counter lightly to make sure the combined mixtures fill up each slot and there are no air pockets. Insert a popsicle stick into each and freeze a minimum of 5-6 hours, preferably overnight. Enjoy!
