Zia Hatch Green Chile Breakfast Tacos
There’s breakfast, and then there’s breakfast with Hatch Green Chile.
These tacos bring the kind of flavor and comfort that makes any morning feel like home in New Mexico.
Ingredients:
- Zia Hatch Green Chile (strained, at least 1/8 jar per taco)
- Eggs (about one per taco)
- Tortillas (fajita sized if flour, our preference) or regular sized corn
- Thick cut bacon
- Shredded Sharp Cheddar Cheese
- Butter for greasing the pan
- High heat frying oil
- Garlic salt
- Milk
- Hot Sauce of choice (we obviously recommend our Zia Hatch Green Chile Hot Sauce)
Directions:
- Line bacon on a rack on a sheet pan (we use 1/2 strip per taco but you can use more). Pre heat the oven to 350 degrees.
- While oven is preheating, heat oil over medium heat in a stovetop pan. Once hot, fry each tortilla for about 15-20 seconds each side, until spots start to brown and the tortilla develops a light crisp. Once all tortillas are lightly fried, set aside and sprinkle some sharp cheddar cheese on one side of each of them while they are still hot.
- By this point, the oven should be pre-heated. Place the bacon in the oven and cook until bacon is cooked to your preference.
- Crack eggs into a bowl, add a dash of milk (about 1 tsp per egg) as well as garlic salt to taste. Heat up the same pan again while you whisk the eggs. Once pan is heated and eggs are whisked, add butter to coat the pan evenly. Pour in eggs and add strained Zia Hatch Green Chile. Let cook for a few minutes as the egg settles and scrambles and make sure Zia Hatch Green Chile is properly mixed in. Remove from heat once done.
- Add eggs on top of each tortilla, followed by bacon and feel free to sprinkle more cheddar cheese as desired. Serve with your favorite hot sauce and enjoy!
