Zia Hatch Green Chile Cheesy Black Bean Bake
An crowd pleasing, easy and delicious recipe that can serve as a dip, a side dish, a burrito / taco filling, and more.
Ingredients:
- 1/2 - full jar Zia Hatch Green Chile (strained)
- 2 15oz cans black beans, drained and washed (We love Heyday Canning Company)
- 1 8oz package shredded Cheddar cheese
- 1/2 cup boiling water
- 4-5 cloves Garlic, minced
- 1/4 cup Tomato Paste
- 1 tsp Smoked Paprika
- 1 tsp Cumin
- Salt and Pepper to taste
- Olive oil
- Tortilla chips, tortilla, or other serving vessel of choice!
Directions:
- Pre heat oven to 475 degrees Fahrenheit and bring 1/2 cup water to boil.
- In a cast iron or stovetop pan, heat oil over medium heat. Cook garlic until fragrant, then mix in tomato paste, cumin and paprika and stir / cook for another 30 seconds.
- Add in the boiling water, black beans, Zia Hatch Green Chile, salt and pepper to taste and stir until combined.
- Sprinkle package of cheese over the mixture and add more Zia Hatch Green Chile on top as a garnish.
- Bake for 10 minutes or until cheese is sufficiently melted. At the end, broil for a few minutes if you desire some more color.
- Serve with vessel of choice!
