Zia Hatch Green Chile Cheesy Black Bean Bake

 

An crowd pleasing, easy and delicious recipe that can serve as a dip, a side dish, a burrito / taco filling, and more. 

 

Ingredients:

  • 1/2 - full jar Zia Hatch Green Chile (strained)
  • 2 15oz cans black beans, drained and washed (We love Heyday Canning Company)
  • 1 8oz package shredded Cheddar cheese
  • 1/2 cup boiling water
  • 4-5 cloves Garlic, minced
  • 1/4 cup Tomato Paste
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • Salt and Pepper to taste
  • Olive oil
  • Tortilla chips, tortilla, or other serving vessel of choice! 

 

Directions:

  1. Pre heat oven to 475 degrees Fahrenheit and bring 1/2 cup water to boil.
  2. In a cast iron or stovetop pan, heat oil over medium heat. Cook garlic until fragrant, then mix in tomato paste, cumin and paprika and stir / cook for another 30 seconds. 
  3. Add in the boiling water, black beans, Zia Hatch Green Chile, salt and pepper to taste and stir until combined. 
  4. Sprinkle package of cheese over the mixture and add more Zia Hatch Green Chile on top as a garnish. 
  5. Bake for 10 minutes or until cheese is sufficiently melted. At the end, broil for a few minutes if you desire some more color. 
  6. Serve with vessel of choice!
