Hatch Green Chile Fennel Sausage and Tortellini Soup

Zia Hatch Green Chile Fennel, Sausage and Tortellini Soup

 

Fennel and Sausage are timeless and comforting flavors. Combine them into a soup with our Hatch Green Chile, Tortellini, and some other greens and you have the perfect meal to welcome you into the cooler temperatures. 

 

Ingredients:

- 3/4 - Full Jar Zia Hatch Green Chile, strained

- 1 Fennel bulb, chopped

- 1/2 cup Fennel stalks, thinly sliced

- 1/4 cup Fennel fronds, chopped

- 3-4 Garlic cloves, chopped

- 1 1/2 quarts Chicken broth (or Vegetable, if preferred)

- 1 package Tortellini of choice (should be about 8-10oz, we used cheese tortellini)

- 1 cup Kale, chopped

- 1 cup Broccolini or Broccoli Rabe, de-stemmed and chopped 

- 12 or more oz Sausage of choice, sliced into 1/2 inch pieces. We used spicy Italian Chicken Sausage as it works extremely well when using chicken broth. 

- Parmesan Cheese, grated

- Extra Virgin Olive Oil for cooking

- Salt and pepper to taste

 

Directions:

1. Puree or blend about 1/3 of the chicken broth with 2/3 of the Zia Hatch Green Chile that you decide to use. Once combined, set aside. 

2. In a large pot or Dutch Oven, heat up oil and cook the sausage over medium to medium high heat around 7 minutes or until browned and crisp. Once crisp, add the chopped fennel bulb, garlic, and salt and pepper to taste. Cook another 5-7 minutes until fennel is soft, stirring and scraping up any browned bits on the bottom of the pot as needed. 

3. Add the chicken broth (both the regular chicken broth and the Zia mixture from step one) and bring to a boil. Once boiling, reduce to a simmer and let simmer for 5-10 minutes until you are satisfied with the broth's flavor. Add salt or pepper to taste if desired. 

4. Turn the heat back up to medium high. Add the remaining Zia Hatch Green Chile, kale, broccoli rabe, sliced fennel stalks and tortellini and cook per the tortellini package instructions (usually around 2-3 minutes). 

5. Immediately remove from heat, stir in fennel fronds and serve with grated parmesan. Enjoy!
