Zia Hatch Green Chile German Potato Salad

 

This recipe is suited to produce enough for a larger gathering. If you are only going to cook for 2-4 people we recommend you cut the ingredient quantities in half. 

The savory German Potato Salad has long satisfied many, and the addition of our Hatch Green Chile is sure to up that satisfaction even more. This is a great Summer side dish for holidays and all of your grilling endeavors. 

 

Ingredients:

  • 1/2 jar Zia Hatch Green Chile, strained
  • 2 lbs Red or Gold Potatoes, diced into quarters, not peeled
  • 4-5 strips Bacon
  • 1 bunch Scallions, thinly sliced. Whites for cooking and greens for garnish
  • 1/2 cup Celery, minced
  • 1/2 cup Apple Cider Vinegar
  • 1/2 cup Water
  • 1/2 tsp Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Dry Ground Mustard

 

Directions:

  1. In a blender or food processor, add Zia Hatch Green Chile, apple cider vinegar, water, sugar, salt and dry mustard and blend / process until combined. Set aside.
  2. Bring a pot of salted water to boil. Once boiling, add potatoes and boil uncovered for around 15 minutes until you can easily put a fork into one. Remove from heat, drain water and set aside in a bowl or container. 
  3. While potatoes are boiling, cook bacon in a skillet or cast iron pan until bacon is extra crispy (you will need to be able to crumble the bacon later). Set aside and pour out about 95% of the bacon fat. Add scallion whites and celery to the same skillet and cook for about 2 minutes until they soften. Once softened, mix in with potatoes. 
  4. In the same skillet, add the Zia Hatch Green Chile / vinegar mixture from step one and let cook until it begins to boil, stirring regularly. Once boiling, pour over the potatoes and turn off heat. 
  5. Mix the potatoes evenly with the scallion whites, celery and Zia / vinegar mixture. Crumble bacon and sprinkle scallion greens on top. Serve warm or at room temperature and enjoy!
