Hatch Green Chile Jambalaya
Zia Hatch Green Chile Jambalaya
This delicious recipe is perfect for celebrating Mardi Gras (or whenever you need comfort food) and can be made under an hour. Let the good times roll!
Ingredients:
- 1/2 jar Zia Hatch Green Chile, strained
- 1 lb Shrimp, peeled and detailed
- 1 lb Andouille Sausage, diced
- 1 cup Onion, finely chopped / processed in a food processor
- 1 cup Green Bell Pepper, finely chopped / processed in a food processor
- 1 cup Celery, finely chopped / processed in a food processor
- 1 cup Green Onion or Scallions, finely chopped / processed in a food processor
- 1 tbsp Garlic, finely chopped
- 1 16oz can Crushed Tomatoes
- 1 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1 cup Long Grain Rice, uncooked
- 5 cups Water
- High Heat Frying oil (about 2 tbsp)
- 2 tbsp Flour
- Salt and pepper
Directions:
- Prepare all ingredients and set aside. In a large pot or dutch oven, heat oil over medium heat. Once hot, add flour and cook until it starts to brown, stirring constantly.
- Add onion, green onions, green pepper, celery, sausage and garlic to the mixture and cook for a few minutes, stirring regularly. Add the tomatoes, thyme, oregano, a few dashes of salt and pepper and Zia Hatch Green Chile and bring to a boil.
- Once boiling, add in the rice and water. This will cool down the mixture, so allow it all to come to a boil again. Reduce heat to medium low and simmer for 25 minutes, uncovered.
- Add in the shrimp and allow to cook for 10 more minutes, until the mixture has thickened a bit and the shrimp is cooked.
- Serve in bowls and enjoy!
