Rachael Ray's (Hatch Green Chile) Everything Chili
We recreated Rachael Ray's Everything Chili that she used our Hatch Green Chile with! We added more Hatch Green Chile, substituted ancho chili powder for Hatch Red Chile Powder and also created Chili Cheese Loaded Nachos and Hatch Green Chile Chili Cheese Fries.

Ingredients:
- 2 tbsp Olive Oil
- 1 lb Ground Sirloin or Plant-based Meat Substitute
- 1 Large Onion, finely chopped
- 4 cloves garlic, chopped
- 1 jar Zia Hatch Green Chile
- 2 tbsp Chipotle Paste from Tube or Puree of Chipotle in Adobo
- 2 tbsp Worcestershire Sauce or Vegetarian Worcestershire Sauce
- 1 tbsp Soy Sauce
- 1 28oz can Fire Roasted Tomatoes
- 1 8oz can Tomato Sauce or Taco Sauce
- 2 14oz cans Beans (mix 2 of either black, red, kidney or pinto)
- 2 cups Beef or Vegetable Stock
- Fries (we ordered from a local restaurant)
- Tortilla chips
- Shredded Cheddar and Monterey Jack Cheese
Spice Blend:
- 2 tsp Smoked Paprika
- 2 tsp New Mexico Red Chile Powder
- 2 tsp Cumin
- 2 tsp Coriander
Directions:
1. Combine spice ingredients in a small bowl.
2. Heat a Dutch oven or chili pot over medium-high heat. Add oil, meat, and season with salt and pepper. Add onions, garlic, and spice blend and stir a few minutes to soften.
3. Add Zia Hatch Green Chile, chipotle paste, Worcestershire sauce, soy sauce, tomatoes, tomato or taco sauce, beans and stock. Cook until thickened.
4. Serve warm in bowls.
For Hatch Green Chile Chili Cheese Loaded Nachos:
1. Pre heat oven to 350 degrees.
2. Layer tortilla chips on a baking sheet. Pour finished Rachael Ray's (Hatch Green Chile) Everything Chili evenly over chips and generously sprinkle shredded cheese.
3. Bake in the oven 4-5 minutes until cheese is melted.
4. Add extra Zia Hatch Green Chile on top.
For Hatch Green Chile Chili Cheese Fries:
1. Pre heat oven to 350 degrees.
2. In a baking dish, spread a layer of french fries and sprinkle with cheese.
3. Spread another layer of fries and cheese, continue layering until baking dish is full.
4. Pour Rachael Ray's (Hatch Chile) Everything Chili on top along with a final sprinkle of cheese.
5. Bake in the oven for 4-5 minutes or until cheese is melted.
